Homemade Greek Yogurt: Super Easy!
I have never been a fan of yogurt. Lately, however, as I changed my daily diet completely (details to follow) I have been enjoying the Greek-style yogurt with berries, no sugar. I think it is better than ice cream--which I have never been a fan of either. (I am beginning to understand what the modern-day intake of sugar does to one's body). Well, the whole family has started enjoying Greek yogurt, but not the price! So I read about it and discovered that it is ridiculously easy to make on your own. Yesterday I did it, by straining plain yogurt (any) with a coffee filter and a large strainer. It was super thick, creamy, the best! A full 2 C of whey was on the glass container after about 3-4 hrs on the counter. I saved it but not sure I will use it, as it is the whey that has the sugars I am avoiding.
If you make bread, use the whey as a replacement for the liquid. You can also add it to your compost pile.
