No-Crust Zucchini Quiche
6 zucchinis, grated
4 eggs
1 Tbsp olive oil
1 Tbsp baking powder
1 C flour
8 oz mozzarella, shredded
salt, oregano
Mix in large bowl, bake at 375 F for about 45 min or until light golden.
Can be multiplied!
I have also substituted some or all of the zucchinis for carrots, onions.

This sounds too good to be penitential for me! :-)
You should see what I fixed last night :-)-- vegetarian cuisine inspires me I guess. I took pictures, will post.
