Homemade syrup

Using maple essence, I have been making homemade pancake syrup for years. It is much more like the pure maple syrup Husband likes, and it doesn't have all of the thickeners/preservatives the bottled ones have.

This morning I made a batch, and also French Toast: the idea was to reproduce last week's breakfast and enjoy it without a burning incident... It worked! Number Six has been healing beautifully and we wanted to make sure we had gotten over the traumatic morning.

Homemade syrup: 2 C sugar (brown or white), 1 C water, bring to a boil, take off
the heat, add 1/2 tsp maple essence.

My French Toast: boil/scald 2 C
milk, whisk in juice of 1/2 lime, 1 Tbsp Brown sugar, 3 eggs. Dip the bread
slices, fry in a little butter. We used Breadsmith's Raisin Nut bread. Yum!
