Non-allergenic pancakes

Number Two's allergies pose new challenges to family meal cooking... I made pancakes and was able to come up with thus yummy version she could eat! It calls for:

oat flour
egg
water
sugar
baking powder
vegetable oil

Tonight we will have baked cod and rice... and she can eat as much as she wants!

Let's see...
I ground organic oats in a coffee grinder, and used one C of that, an 1 Tsp sugar, and 1 tsp baking powder. I used 1 C water, 1 egg and 1 Tsp oil. I could have used almond milk too. Good luck!

Give me a holler if you need any ideas. I've just finished "caramel bars" and chocolate chip cookies and am going to move onto apricot balls. I'd be happy to give any ideas for dinners, breakfasts, snacks, etc. Sending love to you and your family!!
