Gaps recipes

We have team work going on here... I made the gaps-crust, spinach-leeks quiche the other night, Number Two made the Cape Town Chicken yesterday (delicious!), and this morning Husband presented us with this spinach-mushroom-onion omelet with Parmesan cheese. Yum!

Gaps breakfast? Try these!

These waffles are made of processed almonds and pecans mixed with eggs, honey, coconut flour, vanilla, coconut milk and coconut oil.  We topped with chopped fresh peaches and a little honey. The second photo we took of our daily breakfast: fresh peaches and frozen berries topped homemade with strained yogurt and soaked/dehydrated nuts!

A perfect tomato, GAPS update

For years the early-blight has taken our tomatoes plants before they had a chance to produce anything significant. This year many garden plants have died due to the intense drought and heat, coupled with Mrs. Gardener being otherwise occupied, but not the tomatoes. Number Four and I followed our friends the M.'s advice and covered the soil next to the plants with newspaper. We used old decorative tiles as weights. The plants thrive in the heat and the little watering and rain they got was obviously all they needed.

I'm looking forward to making my pizza sauce for the year, and gallons of tomato sauce for winter pasta dinners.

Update on GAPS: with all of the company we had, we went into the full GAPS diet although we are boiling some new chicken broth today and reverting back to Intro as we can. Number Two has felt much better already. It has not been very difficult. Last night after volleyball we drove through for milkshake for the two younger girls and we survived without taking a sip. ;-)  She has made several recipes from the cookbook including the broccoli soup and the peach ice cream. We get creative at lunches and truly it has been fun.

GAPS, day 2

How are we doing? It seems like a very long time since we started, believe me. We have been advised to do the Intro as long as we are able. Yesterday we had only the soup and tea allowed: mint, chamomile or ginger. Today it was the same until dinner, when we had pancakes we made from eggs, mashed butternut, a little almond flour and natural peanut butter. We fried them in coconut oil and also had scrambled eggs in coconut oil with a ripe avocado cut up. 
The soup was good, and we made it from the stock we boiled in the weekend for two days, plus pieces of chicken, carrot, zucchini, onion, butternut, spinach, even green beans and broccoli at some instances.We both had headaches both days and they may be from caffeine withdrawal. Our coach said it is better to have a little caffeine than ibuprofen so I will have a half cup of coffee tomorrow morning. 
We have a lot of company coming this weekend so tomorrow we may advance into the last stages of the intro so we can eat with them.

GAPS diet

Number Two and I begin the GAPS diet today. We have been preparing for this since her arrival:

  • we have purchased farm raised chickens and made stock
  • she had an hour long consultation with a nurse trained in GAPS
  • we have purchased organic vegetables to go into the first phase soups
  • there is homemade kimchi fermenting on the counter
  • we have stocked up on coconut and almond flour, soaked & dehydrated nuts and other items for subsequent phases
  • last night we did sensitivity tests on he skin for bananas and homemade yogurt

What we are trying to do is to somehow reset her immune system by paying attention to the whole digestive system, and hopefully eliminating many of her food allergies and skin problems. Number Two is planning an early spring wedding and would love to feel and look healthier to begin her married life!

Life with Big Sis!

We are all gearing to begin the GAPS diet and off to the market we went this morning, in search of fresh, organic, wholesome ingredients! The girrls are so enjoying being together!
